Skillet Scones With Instant Berry Jam

Ingredients

225g plain flour

1 tbsp baking powder

30g salted butter

1 tbsp milk approx

1 large egg

150ml soured cream

1 tbsp rapeseed oil

A generous knob of butter for cooking

Icing sugar for dusting

Instructions

1Sieve the flour and baking powder into a mixing bowl

2Add the butter and using your fingertips, rub into the flour to form fine breadcrumbs

3Mix together milk, egg and soured cream. Pour into the flour and gently mix together until it forms a soft dough

4Turn out onto a lightly floured surface and gently roll out into an 8 inch round. Cut into 8-10 wedges

6Dust with icing sugar and serve with berry jam.
