
Pulled Mushroom Burger, Homemade BBQ Sauce, Mayo & Slaw

Ingredients
Mushrooms
2 tbsp soft dark brown sugar
1 clove garlic crushed
1/4 tsp Dijon mustard
1/2 cup tomato ketchup
Apple cider vinegar
2 tbsp Worcestershire sauce
Juice 1/2 orange
1/2 tsp finely chopped rosemary
1 tsp ground cumin
3 cups corn oil
1 cup chilled soy milk
2 tbsp fresh lemon juice
2 tsp apple cider vinegar
4 tsp caster sugar
2 tsp Dijon mustard
1 carrot
shredded
1/4 red cabbage shredded
1/4 savoy cabbage shredded
Instructions
1The BBQ sauce:,While the mushrooms cook, add the BBQ sauce ingredients to a small saucepan
2Mix and simmer for 10 minutes
3The mayonnaise:,Add all the ingredients except the corn oil to a blender and turn on at the lowest speed setting
4Gradually add the oil while the blender is spinning. Turn the speed up slightly when halfway through pouring the oil and continue
5Plate the mayonnaise when thickened
6The slaw:,Place the ingredients into a bowl and mix thoroughly with your hand
7Add mayonnaise to suit your preference
8The mushrooms:,Set you frying pan to a high heat with corn oil. Once heated tear the mushrooms and add to the pan
9After a few mins, turn them over until evenly browned
10Remove the mushrooms and shred using a spoon and fork
11Once shredded, add them to the BBQ sauce and stir
12Place more oil in your frying pan and bring back to heat to toast the burger buns,Once back up to heat place the buns face down in the pan until toasted
13Construct your burgers on a plate and serve.
