1 medium lobster cooked cooled and split in half length wise - flesh removed from main body and claws. Reserve the shells and set to one side

1 large ripe mango peeled and diced

Juice and zest

2 limes

Approx. 7 tbps good quality mayonnaise

1 tbps crème fraiche

1 punnet of crayfish tails

1 large bunch coriander roughly chopped

Salt and freshly ground black pepper

Lime wedges to serve

1Simply add the juice, zest and crème fraîche to the mayonnaise. Add half the chopped coriander. Stir through the lobster and mango and season to taste

2Pile this back into the lobster shells and finish with extra coriander and lime wedges to serve along side.

A fresh and flavoursome dish that can act as a light main or an impressive starter.
