Ingredients
4 eggs - 3 separated and 1 whole
200g plain flour
1 onion finely diced
1 garlic finely diced
1 green chilli thinly chopped
1 birds eye chilli halved lengthways
Parmesan- grated
Fresh basil
6 tbsp olive oil
400g tinned Italian chopped plum tomatoes

Instructions
1The pasta (part 1 of 2):,Add one whole egg and 3 egg yolks into a food processor, then add the flour. Mix and turn out
2Using your hands, bring the mix together to form a dough. Wrap tightly with cling film and leave to stand for 30 minutes
3The sauce:,Heat a shallow pan on a medium heat with 3 tbsp of olive oil. Once heated, add 1/2 of the onion, garlic and another 3 tbsp of olive oil
4Once the onions are softened, add the green chilli and plum tomatoes. Cook for 10 minutes
5Add the birds eye chilli and season with salt and black pepper. Turn down the heat and let the sauce simmer until thick
6Remove the chilli,The pasta (part 2 of 2):,Boil water in a saucepan for the pasta and add a generous amount of salt
7Take 1/3 of the pasta dough and using a pasta machine (set to the widest setting) roll the pasta. Keep folding a rolling the pasta (approximately 10 times) until it feels silky. Repeat with the remaining 2/3 of pasta dough
8Pass the pasta through the cutters and place the pasta into the boiling water. Boil for 2 minutes,Mix the pasta and sauce together and plate. Grate some Parmesan on top, add some basil leaves and lightly drizzle some more olive oil on top before serving.
