Pulled Mushroom Burger, Homemade BBQ Sauce, Mayo & Slaw

1 The BBQ sauce:

2 While the mushrooms cook, add the BBQ sauce ingredients to a small saucepan.

3 Mix and simmer for 10 minutes.

4 The mayonnaise:

5 Add all the ingredients except the corn oil to a blender and turn on at the lowest speed setting.

6 Gradually add the oil while the blender is spinning. Turn the speed up slightly when halfway through pouring the oil and continue.

7 Plate the mayonnaise when thickened.

8 The slaw:

9 Place the ingredients into a bowl and mix thoroughly with your hand.

10 Add mayonnaise to suit your preference.

11 The mushrooms:

12 Set you frying pan to a high heat with corn oil. Once heated tear the mushrooms and add to the pan.

13 After a few mins, turn them over until evenly browned.

14 Remove the mushrooms and shred using a spoon and fork.

15 Once shredded, add them to the BBQ sauce and stir.

16 Place more oil in your frying pan and bring back to heat to toast the burger buns

17 Once back up to heat place the buns face down in the pan until toasted.

18 Construct your burgers on a plate and serve.
