Homemade Pasta

1 The pasta (part 1 of 2):

2 Add one whole egg and 3 egg yolks into a food processor, then add the flour. Mix and turn out.

3 Using your hands, bring the mix together to form a dough. Wrap tightly with cling film and leave to stand for 30 minutes.

4 The sauce:

5 Heat a shallow pan on a medium heat with 3 tbsp of olive oil. Once heated, add 1/2 of the onion, garlic and another 3 tbsp of olive oil.

6 Once the onions are softened, add the green chilli and plum tomatoes. Cook for 10 minutes.

7 Add the birds eye chilli and season with salt and black pepper. Turn down the heat and let the sauce simmer until thick.

8 Remove the chilli

9 The pasta (part 2 of 2):

10 Boil water in a saucepan for the pasta and add a generous amount of salt.

11 Take 1/3 of the pasta dough and using a pasta machine (set to the widest setting) roll the pasta. Keep folding a rolling the pasta (approximately 10 times) until it feels silky. Repeat with the remaining 2/3 of pasta dough.

12 Pass the pasta through the cutters and place the pasta into the boiling water. Boil for 2 minutes

13 Mix the pasta and sauce together and plate. Grate some Parmesan on top, add some basil leaves and lightly drizzle some more olive oil on top before serving.
